Black olives come from the Manzanilla Cacereña variety and they have special characteristics like their fine pulp, the low pulp-stone ratio and the texture it has once cured.
Green olives come from the Manzanilla variety and the fruit is characterised by being very round, meaty, with soft fruit, small stone and its typical taste.
